Ingredients
1/4 lb margarine
1 cup sugar, divided
2 eggs, separated
1/2 cup potato starch
1/2 cup cake meal
6-8 oz/ Jar jam
1/2 teaspoon cinnamon
Chopped walnuts
Shredded coconut
Instructions
Preheat oven to 350°.
In a mixing bowl, add margarine, 1/2 cup sugar and egg yols. Beat well. Add potato starch and cake meal and stir to combine. Spread in to bottom of ungreased 9"x13" pan.
Spread jam over crust. Sprinkle with walnuts and coconut. Bake at 350° for 10 minutes.
Beat egg whites until still fiwth remaining 1/2 cup sugar and 1/2 teaspoon cinnamon.
Spread onto jam layer. Return to over and bake for 25 minutes. Cool and slice into small squares or bars.

The combination of jam and nuts and coconut is always a winner and this recipe is no exception.
Notes
These are lovely, Cool completely before cutting or the meringue cracks.
