Make Ahead Gravy

Ingredients 1 stick butter 1/2 Cup Chopped Onion 1/2 Cup Flour Salt and pepper 4 cups rich stock, warmed (4 to 5) Turkey drippings and giblets (optional)

Instructions 1. Melt butter in a medium saucepan over medium heat, then add onions. Cook, stirring occasionally, until onions are translucent, about 5 minutes. Sprinkle the flour on the onions, stirring constantly, and cook until flour is golden to brown. Adjust heat so mixture does not burn. 2. Gradually whisk in 4 cups stock until mixture thickens and is smooth. If it is too thick, add liquid. Cool, cover and chill. 3. When ready to serve, reheat mixture over low heat, stirring. Scrape bottom of turkey pan and add drippings or giblets to gravy. Taste and adjust seasoning, then serve,

Description This is not only delicious gravy, it is huge time saver.

Yield

5 to 6 cups

Notes Being able to make this in advance is great. It saves so much time when getting the meal on the table. It is also the best gravy that I have tasted. I will never make gravy - and the mess it makes - at the last minute again when this is so fabulous.

I have tried to give credit to the source of the recipe where possible.  I never dreamt when I started trying recipes and saving the ones that I liked that there would be something called the Internet where I could share them.  My gratitude to the sources where I was able to provide them and my apologies where I had no way to credit them.
