Ingredients 6 large baking apples, peeled and sliced thin or grated on the largest side of the grater 6 eggs 1 1/2 cups sugar 1 teaspoon salt 1 cup oil 2 lemons, peel grated and juiced 1 1/2 cups matzo meal 1/2 cup potato starch 2 teaspoons cinnamon Chopped nuts 1/2 sugar Raisins
Instructions 1. Preheat oven to 375 and grease a 9x13 pan. 2. Peel and slice or grate apples. I sliced them. 3. Beat eggs in mixer for 5 minutes. 4. Beat in sugar and salt, then oil, lemon juice and lemon peel. 5. Mix together the matzo meal and potato starch and add to the batter, still beating. 6. Spoon or pour half of the batter into the greased pan. 7. Top with all of the apples and raisins and sprinkle with a mixture of sugar, cinnamon and chopped nuts. 8. Top with remaining batter and sprinkle with rest of nut mixture. 9. Bake at 375 for 35-45 minutes.
Description This makes a nice, moist cake.
Notes This was voted the best Passover recipe. However, every Passover Apple Cake recipe seems to get that rating. it think the moistness of the apples makes it better than some Passover recipes. It produced a nice moist cake that I cut in squares.
