Ingredients
1 cup vegetable oil
1 cup white sugar
2 large eggs
1 ½ cups matzo meal
½ cup potato starch
2 teaspoons ground cinnamon, divided
8 large apples - peeled, cored and sliced
½ cup brown sugar, or more as needed
½ teaspoon ground nutmeg
Instructions
Preheat the oven to 350 degrees F (175 degrees C ). Grease a 9x13-inch glass baking dish.
Beat oil, sugar, and eggs in a large bowl with an electric mixer until well combined. Stir in matzo meal, potato starch, and 1 teaspoon cinnamon until incorporated. Set aside.
Toss apples with brown sugar, remaining 1 teaspoon cinnamon, and nutmeg in a separate large bowl.
Layer 1/2 of the dough into the prepared baking dish. Pour apple mixture on top, then pat remaining dough over apples. Sprinkle with some brown sugar, if desired.
Bake in the preheated oven for 45 minutes.

Notes
I followed the suggestions posted on this recipe that said to either halve the apples or double the dough. I doubled the dough and it was perfect. Be patient spreading the dough on the top. I found that a spatula moistened with cold water made it easy.
