Pineapple Glaze



Ingredients 1 tablespoon sugar, 2" cubes 2 teaspoons cornstarch 8 3/4 ounces crushed pineapple 1 tablespoon lemon juice 2 drops yellow food coloring


Instructions In small saucepan, combine sugar and cornstarch. Stir in undrained pineapple and lemon juice. Bring to boiling, stirring, over medium heat; boil 1 minute. Mixture will be thickened and translucent. Stir in food color. Let cool thoroughly before spreading over top of cooled cheese pie.


Description Brightly colored crushed pineapple glaze for cheesecake.


Notes I had invited a college friend to dinner and made a cheese pie that was to be topped with pineapple segments. It took over an hour to arrange and glaze them. He then picked each piece off explaining that he didn't like pineapple. I never made the arrangement again and started to use this topping.
